Sometimes crunchy, sometimes melt-in-your-mouth, but always delicious and comforting... Rice is a true culinary staple around the world. It comes in many varieties (white rice, black rice, red rice, round sushi rice or risotto rice...) and goes wonderfully well with all kinds of seasonings.

Easy to prepare, economical and generous, rice is a cupboard essential to always have at home. It's the perfect ally for dishes in sauce, grilled meats, but also last-minute impromptu dishes. Its great asset: its neutral, mild taste can make it the star of the plate as well as a simple gourmet accompaniment.

Some general rules for flavoring rice


To season your rice, give it flavor and make a change from classic rice, you can:

  • Vary the liquids used to cook your rice: a few lemon zests or poultry or vegetable stock dropped into the water will give it plenty of flavor and fragrance. You can also replace the cooking water with coconut milk or another vegetable milk.
  • Add fresh spices and herbs: rice goes very well with many spices (which you can mix), but also many herbs.
  • Test all kinds of sauces with different inspirations and textures: soy sauces, creamy-based sauces, sweet and savory sauces... 
  • Play with textures and the senses by adding crunch, fondant, acidity, bitterness or sweetness.
  • Change the type of rice to vary the tastes, textures and colors of the dish.
  • Cook rice differently to change from classic rice dishes by choosing to fry it, cook it pilaf-style, make risotto or arancini.

Which herbs and spices go best with rice?

Rice's mild, rather neutral flavors enable it to marry with many kinds of spices and aromatic herbs, which give it plenty of flavor and fragrance.

Oriental-style spiced rice 

A fragrant, spicy recipe that showcases rice at its simplest  !

Ingredients:

  • 150 g rice
  • 1/2 red pepper
  • 4 garlic cloves
  • Sweet paprika
  • Curry
  • Vegetable oil

Step 1: Peel and mince the garlic and dice the bell pepper.

A Cantonese rice revisited

A gourmet, highly fragrant recipe with delicious Asian influences.

Ingredients:

  • 200g cooked rice
  • 100g peas
  • 2 eggs
  • 2 slices of ham
  • 1 onion
  • 2 cloves of garlic
  • Soy sauce
  • Nuoc sauce-mâm sauce
  • Curcuma
  • Cumin
  • Milled coriander
  • Fresh parsley
  • Chives
  • Vegetable oil, 
  • Garden Intense Red Onion Crunch
  • Pepper

Step 1: Heat a little oil in a frying pan, sauté the minced onion and garlic.

Step 2:Add the turmeric, cumin, ground coriander, and mix.

Step 3:Include the peas, diced ham, then fry for a few minutes.

Step 4:Beat the eggs into an omelette and cook separately, then cut into pieces.

Step 5:Add the pan-cooked rice, mix with the soy sauce, nuoc-mâm and leave to cook for 5 minutes.

A creamy mushroom risotto

A gourmet, comforting recipe and a new technique for cooking rice... In risotto!

Ingredients:

  • 200g risotto rice
  • 300g mushrooms (button mushrooms, shiitake mushrooms...)
  • 1 onion
  • 2 garlic cloves
  • 50g grated Parmesan
  • 15cl fresh cream
  • Persil
  • Chives
  • Thyme
  • Romarin
  • Curcuma
  • Paprika
  • Vegetable broth
  • Olive oil, 
  • Pepper

Step 1: Heat the oil in a frying pan, sauté the minced onion and garlic until translucent.

Step 2: Add the sliced mushrooms, and sauté until golden.

Step 3: Add the rice and stir until pearly.

Step 4: Stir in the turmeric, paprika, thyme, and rosemary.

Step 5:Pour a ladleful of hot broth over the rice, let it absorb, then continue to add the broth as you go, while stirring.

Step 6:When the rice is cooked and creamy (after about 18 to 20 minutes), stir in the crème fraîche and Parmesan. Pepper gently.

Step 7:Sprinkle with chopped parsley and chives before serving. Add a few grindings of crunchy thyme and rosemary, and you're done!"

 

Lemon rice and spicy yoghurt sauce

A light, fresh dish, perfectly balanced thanks to the acidity of the lemon and the sweetness of the yoghurt.

Ingredients:

  • 200g basmati rice
  • 1 lemon
  • 2 garlic cloves
  • 1 plain yoghurt
  • Mustard
  • Cumin
  • Curcuma
  • Minthew fresh
  • Pepper
  • Olive oil

Step 1: Cook rice with salt, lemon juice and zest.

Step 2:For the sauce, mix the yogurt with the mustard, cumin, turmeric, minced garlic, and chopped mint.
