Apples in a grey Guérande salt crust - Le Guérandais Served with salted butter caramel cream

Ingredients

  • 4 APPLES
  • 2 KG LE GUÉRANDAIS COARSE GREY GUÉRANDE SALT
  • 2 EGG WHITES
  • CANNELLE

Preparation

  1. Preheat oven to 250°C.
    Beat egg whites and mix with salt. Add 5 tablespoons cinnamon. Coat the bottom of a baking tray with the salt. Place the apples on top and cover with a 1 cm layer of salt.
    Place in the oven for 15 minutes.

  2. Remove the apples from the oven and leave to rest for 5 min. Carefully break and remove the coarse salt crusts.
    Serve the apples, still warm, with salted butter caramel cream.
