Ingredients

Serves 4

  • 2 sea bream fillets
  • 150g neutral oil
  • 1 bunch lemon balm
  • Fresh herbs of your choice
  • Fleur de sel Le Guérandais
  • Ground pepper

Preparation

  1. Lift the fillets from the sea bream and carefully remove the bones.

  2. Blend the oil with the lemon balm without heating, leave to infuse overnight in the fridge, then strain through a sieve.

  3. Slice the sea bream fillet a little thicker (3mm) and arrange attractively on a plate.

  4. Arrange the herbs of your choice, and season with Le Guérandais Flower of Salt, freshly ground pepper and lemon balm oil.

  5. Serve immediately.
